hello monday.
well i did something this weekend.
it might just be life changing.
and slightly addictive.
on saturday afternoon i put together 16 freezer meals.
here are the details.
i made 2 of each...
chicken pot pie
lasagna
white chicken chili
lasagna soup
chicken caccitore
honey and rosemary chicken
chicken noodle soup
bbq chicken
plus 40 or so twice baked potatoes.
it feels amazing to know i have that much yumminess in my freezer ready to throw in the oven or crockpot.
i am hopeful it will simplify our nights.
i will do this again, but i would change a few things.
here is what i learned...
*i won't do this by myself again. tim was in oklahoma on saturday so he missed the cookin tornado that passed through our kitchen. the girls were both really helpful during the cooking, but i simply need another set of hands.
*double check the list to make sure you have all your needed ingredients. i forgot a few key ingredients and had to make a grocery store run...it just slowed down the whole process.
*it can save time and money. i have been reluctant to try freezer meals because i thought it might cost me a bunch up front, but really it didn't. i spent $124 on groceries for my meals...and in all honestly about $25 of that was on food not used in my 16 meals. plus cooking like this helps eliminate waste.
*it was fun. i really enjoyed "letting loose" in the kitchen and not worrying about the mess i made. the girls also got into it too. they put together the two pans of lasagna.

*I used four of my freezer meals this week. Excited{and relieved} to have most of my cooking already done for the week!
Monday: Lasagna
Tuesday: Chicken Pot Pie
Wednesday: BBQ Chicken and Twice Baked Potatoes
Thursday: Chicken Noodle Soup
Friday: Homemade Soft Pretzels
