Meal Planning Monday

Week of Monday March 28th

Monday: Lasagna

Tuesday: Chicken and Rice Soup

Wednesday: Hamburger and Green Olives Stromboli and Peanut Butter Pie
**It's Tim's Birthday and for the past 5 years we have 'surprised' him with Peanut Butter Pie. So I don't think it is much a surprise anymore.....however the girls do a good job keeping it a secret!

Thursday: Crock Pot Green Chili Chicken Burritos
**When I saw this recipe it reminded me of the ones the burrito man (who was also the school custodian)used to sell outside my school in Tempe. He made THE BEST burritos and gave a good deal to the teachers. It was always a treat on Fridays when we had breakfast burritos! Yummm-o!

Friday: Blueberry Pancakes

Saturday: Grilled Cheese and Mac n Cheese
**This is what the girls requested and I aim to please! :)

Sunday: Beef Nachos with homemade salsa and guacamole.

I am on a rampage.....

...an organizing and cleaning rampage!!!!!

You could call it 'Spring Cleaning'.

My craft supplies had just plain got out of hand.

Our closets were a disaster.

So this morning I tore apart my laundry room, 3 closets and the cabinets in both bathrooms upstairs. At this point nothing is finished...but we are heading to Target. I needed a break and some organizing/storage supplies.

Most Saturdays it really bugs me when Tim has to work but today I am glad he is not here.....he might think I have lost my mind! I have until 1 pm to get things put back together......not sure I will met that deadline (especially since on I am on here bloggin! ha!)

Here is a picture of what my upstairs hallway looks like right now...remember the ole saying...it gets worse before it gets better. It definitely applies in this situation. (side note I used to always tell my mom that when I was cleaning my room!)

Meal Planning Monday on Tuesday...whoops!

Yep my meal planning is a day late...I am still on my Spring Break schedule or already on Summer Break schedule..I am not sure which! Needless to say we really enjoyed being home last week and are counting down til Summer time! And I am proud of my little girlies they have snapped right back into our normal routine with no crying,  tantrums, or fit throwin (minus the small fit Ellie threw Monday morning when she saw her March Madness bracket...her champion had lost the night before and somehow she lost the will to go on! Luckily it returned shortly!)

My heart has been heavy the last couple days...over break a teacher in my building had a beautiful baby boy. However, little Jonathan's heart needs some work. He underwent surgery today and has cleared the first of many hurdles. God definitely has a plan for Jonathan born on March 16th...do you see it John 3:16! Amazing! Please pray for Jonathan and his family!

Ok so here is the meal plan....

Sunday: we had Salsa Chicken

Monday: we had Turkey and Provolone Roll Up
I made this up on a whim because someone (ellie) really wanted mac and cheese...so I had to come up with something to go with it...the lasagna I had planned just did not quite work! Anyhoo...it was a HIT! And super duper easy! So I thought I would share...

Recipe:
Tube of Pillsbury Pizza Dough Thin Crust
Turkey
Sliced Provolone

Steps
1. Roll Out Dough
2. Place a single layer of turkey on dough
3. Add cheese...I did not do a complete layer, there were spaces between my cheese slices (does that make sense?)
4. Bake at 400 for 10-15 minutes
5. Enjoy!

Tuesday: Cheeseburgers and Roasted Potatoes

Wednesday: Veggie Lo Mein and Egg Rolls
A family fav!

Thursday: Homemade Pizza....ham and sausage on one side and ham and sauerkraut on the other!!!

Friday: Fish Stick Tacos

Spring Break Chicago

For Spring Break my mom, Ellie, Cece and I went to visit Emily and Noah. We also took a girls trip into the city. We had lots of fun! I will let the pictures do the talking!

We took the scenic route to Emily's along the Rock River.


Emily had a Spring Sport Kick Off Event on Friday night...we went along and got a few pictures of her in action!


Saturday morning we ate pancakes to support her softball team. Then we headed into Chicago on the train.

Green River! We missed the parade but got to see lots of crazy Irish people!




Eating Chicago Style Pizza (actually more like waiting to eat Chicago style pizza...because it takes a long time to bake...especially when you are really REALLY hungry!)





Field Museum...where we were shrunk down smaller than a penny and got to explore the underground!

 Cece was asleep in the stroller under my sweater. On our walk from the Museum to the Bean she was running from Nana (they were playing tag) and she fell down scrapping her nose and knee and cutting her lip.

It was a wonderful trip....except when I woke up Tuesday morning with the stomach flu:( I managed to get things under control and survived the 4 hour trip home {barely}!
